I'm alive! Featuring my Ita test experience

Wow I can't believe that I haven't post anything on this blog for this long.  I just came back on here to say I'm still alive haha!  And I have a story to tell. 
For those of you who are trying to become an actual professional chef in Canada, there is something called the ITA (Industry Training Authority) which is a bureau where you can get your liscence for certain trades of an industry.  Currently I am doing the culinary arts industry.  There is three levels for getting your liscence and being certified.  Unlike other industries, trade industry requires you to go to school for a year and then go into the industry and actually work and do a lot of paper work to show that you are actually working. 
So while working and doing exams for the first two levels, the last step is to gain 3,000 hours to be able to write your Red seal. What is the red seal anyways?  Red seal is a nationally recongized trade certification throughout Canada which allows you to work anywhere in Canada, in any province.
Working towards that is the ultimate goal for anyone in their trade.  I know for a fact that a lot of cooks out there doesn't have their red seals or any culinary certification.  Those that actually take the time to go to school and get certification stand out the most and are the first to be promoted too.  In my kitchen with around 30 cooks, only maybe 7 cooks actually have their red seals and 3 that is still working on getting theirs.  So just keep that in mind the next time you go to a restaurant.  Not everyone has their certification and a lot are quite brainless too I must say.
Anyways, enough of the boring part.  Story time!  After going back to school back in the summer of 2012 and finishing it on November 2012, I wrote my test but I failed since I didn't exactly study enough since I was working full time :/.  Not very smart for me to think that I could just wing it but that is the truth and I learned from that.
This time around, I gave myself enough time to actually study and took time off work so I could just focus and not be like last time.  Second time around I was actually a lot more confident since I knew what was going to be on the test and I knew what to expect.  I did all of the Ita self guide self test and found out a lot of the questions in the study guide was actually on the test too so that made me a happy camper.
Yesterday was the day for me to write the exam.  Sadly they didn't have anywhere for me to write the test in my city so I had to pick the closest one to me which was Burnaby (British columbia).  Let me just say that I was nervous enough about write the test.  It is another thing for me to be driving in a foreign city with me looking back and forth at my GPS. 
My test was scheduled at 1:00 pm but we had to get there before 12:30 pm.  I actually got there super early since I was scared I couldn't find the place.  I actually almost most the entrance HAHA.  The place look super sketch though >_<.
This doesn't look like a place where you write your test but yea, it actually was.  Thank god I drove too because I would never be able to get to this place by bus >_<.  Oddly enough, people that came to write the test wasn't just writing the culinary test.  Everyone was actually writing a medly of other trades too.  It wasn't that uncomfortable because, well I'm only there to write a test but all the other people that came through the door were all men.  They all looked so clueless and a little mean too HAHA.
The test itself wasn't that bad.  100 multiple choice questions.  We had three hours to write your test but I finished in the first 50 minutes and was the first to leave the building feeling super confident with my answers.  Test results take 2 weeks to be emailed by the ITA so I can't wait to see my results and I am praying long and hard that I pass :).

How to make: Sugar cookies

Sugar cookies is one of those really simple cookies with tons of icing on them, pictures of kids' favorite cartoons that just makes them smile.  I remembered when I was in elementary school and there would be this once a month thing where parents and kids would be able to have hot foods like A&W and little ceasars pizza brought into the elementary school.  Depending on how much your parents is willing to pay for fast foods, that is what you would get as a lunch.  I never got the awesome sugary stuff, I always just got a burger or one slice of pizza while I watch my friends that would have the whole deal; dessert, drink and all!  I would just sit there with envy.

So for me and my boyfriend's 17th month anniversary together, I decided to go old school and made him some cookies like the girls that was crushing on a guy in a drama. Hopefully this is easy enough to follow.  I didn't take enough pictures I know, but my hands were dirty and there was no one to take pictures for me :(. I sometimes wish I had three hands.
                 Yield: 20 cookies (30 g each, depending on your thickness)    
  [Ingredients for sugar cookies]
 Pastry or all purpose flour                                8 oz.                                 240g
 Baking power                                                    0.07 oz (1/2 tsp.)            2 g
 Unsalted butter, softened                                 6 oz.                                180 g
 Granulated sugar                                              4 oz.                                120 g
 Powdered sugar                                               2 oz.                                 60 g
 Salt                                                                     0.1 oz. (1/2 tsp.)              3 g     
 Egg                                                                    1.6 oz. (1 egg)                 48 g
 Vanilla Extract                                                  0.15  fl. oz. (1 tsp.)           5 mL
1) Sift together flour + baking powder+ powdered sugar and set aside.
2) Cream butter + sugar until light and fluffy. Blend in salt + egg + vanilla. Add flour mixture, beat until combined. 

*Don't over mix or else your cookie will be tough and not pleasant to eat. Over mixing will form too much gluten which gives products structure.  Depending on what you want to make, you have to adjust your method and mixing time*

3) Wrap dough in plastic or place into a container and let it sit in the fridge until firm; approximately 1-2 hours. In the mean time, you can make your royal icing :). 


[Ingredients for Royal icing]
Powdered sugar                                                 1 lb.                                  480 g
Lemon juice or water                                          4 fl. oz.                             120 mL
Corn syrup                                                           2 fl. oz.                              60 mL
Vanilla extract                                                      0.15 fl. oz. (1tsp.)            5 mL
Food coloring                                                      As needed

1) Combine  sugar + lemon juice or water ( i recommend using fresh lemon juice since it cuts the sweetness and you can taste that hint of zestyness when you eat the cookies) + corn syrup + vanilla with a mixer on paddle attachment. Blend on low speed until sugar dissolves and mixture is smooth. Adjust consistency by adding more water or more icing sugar.

2) Apply icing to cookies and let them air dry until they harden.  Cover leftover icing with plastic wrap so it doesn't harden on the surface.   Icing would keep for 3 weeks.

4) Set your oven at 325 degrees F (160 degrees C).

5) Once the dough set, cut the dough in half and leave the rest in the fridge. Roll it out to about 0.3 mm thickness. Take your print outs or in my case, pictures I draw with a sharpie.  These characters are from an anime my boyfriend and I love called "Polar bear cafe".  Its a really kiddie but funny animal and human cartoon. Anyways, cut your dough out and place them on a tray with parchment paper.

6) Bake for approximately 10-12 mins or until light golden brown.  Make sure to keep an eye on them!

 7) Let them cool and star to decorate!
 Here's a little tip when you fill your piping bag and don't have another pair of hands to help you. Place your piping bag in a cup or something tall and round and there you go :D.  You don't even need another pair of hands! You have a brain! Just make sure you either twist the tip of you cut it already or just not cut it until you filled it.

If you wanted to do outlines for your characters, make sure you pipe the black outlines first, let it dry completely then start filling your cookies.  To fill your cookies, place very little icing between the lines and spread it with a toothpick or just tip your icing around. 
And voila.  Okay I have to admit that I could have done a better job with the piping but i was doing it freestyle :(.  Please don't hurt me.  Haha if you look closely, there's a joker panda too :D.

Anyways I hope you guys try this simple recipe out.  The only hard part was the piping and spreading the icing around the outlines.  Other then that, every things was very straight forward. Although the cookie is straight forward, the detail work took about two hours since i was watching t.v. while doing this and the faces were pain in the bum to fill in LOL.

Umi at Richmond center's new dining terrace

Not too long ago, Richmond center opened up their new food court that replaced the old Sliver city theater and made the space brand new again.  It was the talk of the town! Everyone just went there to see the new place and I must say that it is very pretty :).  It screams IKEA to me but it is nice.  The bad thing is it has very limited choices since its only one sided compared to before where it was two sides of the mall.  The food choice wasn't that great, it was just the same old fast food restaurants with a new-ish look.  The only place that intriguing to me was this Japanese restaurant called Umi.  Now I have never heard of such place but i do like their concept.
Their logo is this calming leaf green with a eco look to their place.  Their tables in the back are made out of wood and they have chic little white chairs for those that want to sit in their little bar area (no alcohlic drinks though). The place is really big compared to a lot of the other restaurants, they actually have a little drink and dessert bar which i forgot to take pictures of >_<. DOHH~
 Why this Umi place peeked my interest was that they make sushi by order.  They do have boxed sushi already but you also have the choice of taking a little form and tic-ing off the items you want and they will make it for you a la minute! There's really nice :D.  And on the far right side, you can see a man making fresh udon so you are guaranteed that they are serving you fresh udon too! Their udon bowls cost about $7-$9 depending on what you order but I don't find that too bad. My boyfriend and I might have ordered the must boring item on their whole menu but it wasn't too bad.  
Their decor is very chic, simple and clean.  I love it :).  And I love their lighting too! If you look closely, their lights are all shaped like shells.  Thats their logo in the back I believe, some interesting swiggle.
My little condiments; getting ready to eat :).  They have my sriracha sauce, some Japanese spices for rice and some standard soy sauce.
So we ordered the beef teriyaki since it had a little  bit for $7.99.  Not bad :).  There was a little side of edamame, two California rolls, some other type of sushi LOL, vegetable tempera, some sushi rice with beef teriyaki and a side of pickled ginger and wasabi.  Everything was pretty average but I like that I don't have to eat just burgers all the time when i go to a food court.
Right at the last minute, i grabbed a little box of sushi since I was about to order a udon bowl but I didn't really believe that we could finish it :/ so I got a little box of sushi too :).  This one was called "Green Dragon Roll".  Lol that's not the most appealing name but I can understand why they called that.   This type of sushi is just like a California roll, seaweed wrapping the fillings and rice surrounding it on the outside.  The inside has avocado and cucumber and on the top is some BBQ eel with more avocado.  Honestly I didn't really have any time to think so I just grabbed one that had avocado on the top LOL.  I love my avocado :), so yummy and buttery and good for you too! This was average too, nothing special.
My receipt.  I must say though the wait for my food was a little bit long, it was about 15 mins.  For a food court place, that felt like forever! My boyfriend was getting restless waiting LOL.  He came back to me and was like OMG that was at leaaasstt 20 minutes! UGH! I had to show him the receipt to prove to him that it was 15 minutes just to calm him down HAHA.
Last but not least! Dessert! Yes we did get a three course meal at Umi.  We were just sitting on their little bar area and I saw a lot of people ordering these so it peeked my interest. These were advertised for $3.99 so it wasn't so bad!  You got three flavors of "ice" to choose from, mango, green tea and taro.  Naturally me and my boyfriend shy away from taro since its always just powdered and unnatural flavored so it was down to green tea or mango.  We agreed on mango and the fun started from there. I believe they actually make their own "ice" and they put it in a giant machine that rotates the ice and shaves it really nice and thin.  Whats different about this shaved ice is the texture.  It isn't like shaved ice at all, its kind of like a cross breed of sorbet and frozen yogurt! Not dry at all but a little bit too sweet for both of our liking. They had this whole bar where you can choose what toppings you want.  The package included 3 toppings and 1 sauce.  We tried the rainbow jellies which the guy recommended since he said it tasted like gummy bears. We also got some pock and some sugar squishy things which i forgot the name of.  To top off the mountain of sweetness, we had some condensed milk! My favorite!  We sat down and wow :).  We were happy.  The mango was yummy but all together, everything was wayyy too sweet.  We got too sickened by this dessert not too long after but I was a trooper and ate it all :).  

Overall this was a fun experience but I will not be running to Richmond center just to eat here.  This would be a first choice if i was in Richmond center's food court since everything else there was just burgers and fries but yeah, average.

Hyatt Regancy Vancouver downtown Mosiac Bar and Grill Take 3

    About a year and a half ago, I went to Hyatt Regancy Hotel's restaurant in Downtown.  It was my friend Karen's last week before she was going to move to Toronto for school and stay there for possible her whole lifetime so I wanted to treat her to a dinner. 

My first experience there was absoultely mind blowing and that restaurant has been my go to restaurant whenever I went to downtown Vancouver.  Since I had this special card membership which allows me to have a buy one get one free on entrees since I work in the industry, it was just the no brainer place. 
 Tuna tataki salad rested on a piece of banana leaf, topped off with a brunoise of avocados, cucumber, mandarin oranges with a acidic sauce (guessing it’s a vinaigrette?)
I still remember we had the tuna tataki salad, paella and lamb.  Everything was soo damn good and I remembered that the presentation was absoultely inspirational. I actually losed the picture of the paella which is a shame since it was soo good but heres the picture of the tuna and lamb. $17

This was the pan seared Peave River Lamb resting on some mille feuille potato (basically scalloped potato without the cream and what not, but its nice and crispy on the outside, soft and yummy on the inside) and some sauce robert (brown mustard sauce).  I was seeing starts when i was eating this back then and i wanted more! Well later on i mean.

So the second time I went back at night with my boyfriend, we were just wanting to eat and we took the sky train from Richmond all the way to downtown just to eat their food.  It was a complete disaster. The pictures you see above, the food level was completely not there.  I was so surprised since they did so well the first time.  Keep in mind, I myself am a professional cook so I am really picky since from the time the plate sits in front of me to the time I taste it, I dissect everything in my mind. This might not be a fun thing for me since I can’t convert my mind back to the good old days when food was just food to me.  But because my passion for food grew, so did my knowledge. 

Me and my boyfriend ordered the lamb again, the same one from above, and a chicken dish with gnocchi. Ugh, it made me so mad.  I was expecting the same lamb.  They frinkin gave literally a rectangle of the potato, five French beans laying sadly on the side like dead corpses, three rounds of the lamb and sauce just splashed onto the plate! It looked like something the dishwasher plated….Like seriously? I was sooo pissed, I was ready to storm into the kitchen and throw the plate back at them.  That’s not even the worst thing.  The chicken was absolutely terrible! I don’t know if a smoker or whoever made my food, but did they taste the amount of salt they put into it? The amount of salt they put into it, I can clean bacteria out of my mouth without (You know, when you’re sick or have a sore throat, you would dissolve salt into water to kill bacteria). I was pissed.  I was completely pissed.  I didn’t come all the way just to eat their food and be completely disappointed.  If I wanted mediocre, somewhat edible food…I’d just go to McDonalds! I swore after that experience, I’d never go back. I even told the waitress that the food standard was not even there, even showed her the lamb picture above and she lied to my face saying that they changed the menu.  Bullshit…I hate it when they try to save their ass and make up excuses.   I didn’t even touch my chicken, it was so damn salty.


Just last Saturday, I told my boyfriend that he and I should go to Sears downtown since everything was 70% off since they were closing their store there. We got really good deals and those pictures will be on my other beauty blog www.mmnoob.blogspot.com.  Anyways we were hungry  but we couldn't decided what to eat.  Just on the way walking on robson street, we saw that there was a small section of the block was blocked just for us to....

Oh yes, it is what it looks like :). Whoever had this idea is GENIUS! After a long day at work and still walking around, my legs were KILLING me.  Me and my boyfriend almost didn't want to leave since it was so comfy but our hunger was getting to us LOL. But i was scared if we did fall asleep, we'd sooo get mugged. He said "Hmm since we don't know where to eat, let’s just go to Hyatt then." I was really hesitating but I said sure.

When we went there, we were greeted by a Japanese host and was sat down next to the window.  I was staring at a seagull staring at me while sitting on a light post which was quite entertaining since he moves around like a turkey HAHA.
For our first course, we got the Maan Farms Corn Bisque with jalapeno sopapilla $7.  The consistency was a little thin for a soup, but the flavour was pretty good.  I didn't really taste any jalapeno spiciness but the sweetness of the corn was nice.  Not too heavy, a good started.  I actually didn't even get to try the triangle things on the side since my boyfriend devoured it before i could get my hands on it. I really liked that the presentation was super simple, chic and modern.  Straight forward food is my kind of food :), although i do like fancy food too.

My boyfriend took quite a long time to drink the soup, but our mains were finally here! I was so hungry~ Here I had the Weathervane Alaskan bay scallops with a squid ink risotto, roasted corn, pickled red peppers.  I was really surprised that my risotto came black LOL.  I can't say that the squid ink gave any special flavour, but then again, I never tried squid ink before so I wouldn’t' know.  Look at that presentation! This is what I'm talking about! Little pink flowers, roasted corn, thinly sliced parmesan cheese and perfectly seared scallops. This dish was to die for! My boyfriend liked this dish more then his lamb (which is his favorite!) LOL, i was gonna be like "MY PRECIOUS!" but i had to be the good girlfriend and share HAHA. And the price is mind blowing too! $17~~ So cheap taking into consideration that we were eating in downtown, in a downtown hotel and the food was amazing...this was cheaper than Cactus club :).
My boyfriend got the Cumin five hour roasted lamb, rolled eggplants, tzatziki, preserved lemons.  I didn't really taste the cumin but the lamb was cooked perfectly.  Ughhh so good~ the sauce was alright.  Didn't really get to taste this since my boyfriend is a beast when it comes to food! LOL I joke i joke (but seriously). $21

Since my boyfriend was curious about what truffle (not the chocolate, the fungus) is, I decided that we should get a side of truffle pomme puree (essentially mashed potato but more delicate and lighter). So good...My boyfriend is officially understand why truffles so expensive :).
We somehow squeezed in a dessert but I asked the waitress what is the smallest dessert.  When she gave me the dessert menu, my eye just shot right to the white chocolate mousse since my boyfriend is in love with the white chocolate itself. I wanted to surprise him since he had to go find the washroom.  Right when our dessert came, they dimed the lights down so I apologize for the quality of the picture: /. Our chocolate mousse came as a pyramid, a strawberry aspic tip on the top and an airy white chocolate mousse. This actually isn’t my favorite dessert but it wasn’t bad.  The balsamic reduction is a little out of place since the white chocolate is so delicate flavoured, the balsamic reduction is just too strong and over powers everything.  There also was a side of brunoise of strawberries that was tossed in some balsamic vinegar and topped with some Chantilly (whipped cream + icing sugar + vanilla extract).
Overall, I was pleased to say that Hyatt is back on my HAVE TO GO restaurants. Their price point is awesome, most expensive thing there is only $21 and the food quality is absolutely mind blowing. Dinner all together was only $50 for two people (one main was for free), definitely will go back :). I hope any of you guys that read this or come to Vancouver, please please please go check this place out.

Homemade ice cream

I actually learned to make real ice cream in school. I would say this is actually really close to the Haagen dazs but I would say for this recipe, I would put a little bit of vermouth in it so it doesn’t harden so much.  Why would you put alcohol into ice cream you ask? Well if you guys didn’t know, alcohol cannot freeze.  You can put alcohol into the freezer, and it will never in a million years freeze.  Another tip is to cool the mixture completely down so that it can work fast in the machine.  Long long time ago when I was a kid, I tried the ice cream machine my mom bought but it didn’t work and it just tired out into frozen milk.  That didn’t go well LOL.  So I was quite excited when this ice cream worked out! Its fattening though so beware XD.
[Ingredients]
7 egg yolks
200 g sugar
500 mL milk
250 g whipping cream
Coffee beans (optional, depending on what flavour you want; I will include more flavour options down below)
1) If you are going to make coffee ice cream, grind your coffee beans to a medium grind and heat up your milk + cream.  Turn your heat down to medium low and let the coffee infuse into the milk and cream mixture.

 2) Whisk together sugar + egg yolk in a bowl.

 3) Once the cream + milk is done infusing, tamper the eggs. Tampering means to heat up the egg yolk mixture slowly and not suddenly so that the eggs won’t scramble. To do so, ladle some cream into the egg yolk mixture while whisking.  Keep doing so until you are done adding all the cream.


 4) Transfer the mixture back into the pot and turn the heat back on medium low.  Make sure you don’t burn your cream or over cook your eggs! This mixture is very very delicate! NEVER BOIL THIS MIXTURE or you will have to start over again. Heat until it coats the back of the spoon.  To taste if it is done, dip your spoon into the mixture and if you can create a clean crisp line like the picture above, its done.
 5)  Cool the mixture down with a bed of ice until it is completely cool.  Put it into your ice cream machine and let the magic happen.  My ice cream machine is Cuisineart Frozen Yogurt- Ice cream & sorbet maker which sells now for about $59. This is a very old model but I think it works nicely, don’t need anything fancy if it gets the job done. It took about 30 mins for the ice cream to form, you’ll know when you see it you ice cream eaters :D.


6) Let the ice cream rest in the freezer overnight and then its time to eat your heart out  :D.

Over flavour options
-Vanilla : Add one vanilla pod into the pot when heating up the milk and cream.  To do so, slice the pod in half and using the back of the knife, scrap all of the beans and mix into the cream + milk.
-Chocolate + Rum: Prepare recipe of vanilla ice cream; eliminate vanilla and use 1/3 less sugar, add 100 g melted semi sweet chocolate and 30 mL dark rum.
-Maple + pecan: Same recipe, eliminate sugar and vanilla. Add 200 mL  real maple sugar once mixture has cooled. Fold in 150 g chopped pecans once mixture is removed from machine.
-Strawberry ice cream: Same recipe, eliminate 150 mL fresh strawberry coulis. Once frozen, & removed from machine, add 100 g diced fresh strawberries.
-Mango: Same recipe, eliminate vanilla and 150 mL of cream.  When picture is cool, add 150 mL mango puree (can buy them in a can). Once frozen and removed from machine, add 100 g diced fresh mango.
-Lemon: Same recipe, replacing vanilla for 60 mL freshly squeezed lemon juice and 5 mL grated lemon zest.
-Pineapple: Same recipe, eliminate vanilla and reduce sugar by 100 g. Cook 150 g of diced ripe pineapple with 150 g sugar and 100 mL water until syrupy. Puree pineapple mixture and stir it into the ice cream mix.
-Hazelnut: Same recipe , eliminate vanilla.  Add 100g finely chopped roasted hazelnuts. After roasting, place hazelnuts in cloth and vigorously rub to remove skins.
-Pistachio: Same recipe, eliminate vanilla. Add 100 g very finely chopped peeled pistachios and 30 mL almond liqueur.  To peel, blanch in boiling water and shock in ice water then peel.

So two days ago I was super hungry all of a sudden and remembered I didn't have any dinner. I wanted something fast, a sandwich perhaps :). But not just any old sandwich, something hot. Hmm...what did i have in the fridge?

Ingredients:
-egg
-cheese
-onion
-honey ham
-two slices of multigrain bread
-butter

1) On medium low heat, melt little bit of butter and crack your egg.  You can do whatever you like to your egg but I like my egg yolk almost cooked or fully cooked.  Let that cook and set aside.

2) Carmelize your onions and heat the ham.  Set aside.

3) Melt butter on your pan and place your two slices of bread.  Your heat should still be on low.  Add your cheese and cover.  Let the cheese melt and your bread to develop that nice crust.

4) Assemble your sandwich.  I added some dijon mustard to mine :D.  And your done.  This is a really simple sandwich for when your having cravings like me and want something fast and simple.

Oh yes, this completely hit the spot! It was soo yummy and this was actually the first time making myself a hot sandwich. It was so good and I couldn't believe I actually finished it. I eat like a bird, keep in mind. People at work when I go to lunch or dinner break, they always ask me if I'm on a diet or something. I just eat constantly so I don't get bloated OKAY! :'( Understand me.

Starbucks crazy

Okay, i have to admit...I think I have a problem. The problem? Starbucks...and its not about coffee because i don't really like coffee that much, but Starbucks smoothies and Frappucinos. As you might know, Starbucks only has about four flavours for frappucino: Strawberry & Creme, Green tea, Chocolate chip and Vanilla Bean. My favorite one I usually order would be the green tea which is what my boyfriend really likes too so i usually just order a venti and share with him :). The smoothies they have are only strawberry, orange mango and chocolate. I'm not up to try the chocolate one since I like fruit smoothies and I'd usually order the orange mango one because, well ITS AMAZING !This one is the orange mango smoothie. Haha yes, that smy boyfriend tanning next to the pool XD. Anyways when you first sip this drink, you taste the tangyness of the orange and the creamyness the banana gives you but then after you glup it down, you get that slight exotic mango taste. Oh yea, soo good. I definitely recommend this.This one is a chocolate strawberry frappucino and yes i know this is not on the menu. The fun thing about starbucks is that you can customize your own drinks! The reason why I get so much starbucks is because where I work, there's a starbucks in the building so I use my starbucks cash card thingy and earn the points. I will explain that in a seperate blog post. Anyways, my co-worker recommended a strawberry chocolate frappucino because she said a strawberry chocoalte smoothie would be really disguisting. It was AMAZING! (Yes I use that word a lot). Its just like ice cream, so rich with chocolate flavour and that bam in your face strawberry. Everything just works well but the really werid thing was after me and my boyfriend drank this, me had a mild stomach ache. Maybe it was something in the drink but I'd still order this again because its soo good! This one is a completely customized drink which I ripped off of my friend (HEY DUSTIN!! If you can see this :) who had a picture on facebook. He called it the "Cookie and cream frappucino" but I found the flavours of this drink is more of a Ferrero Rocha Frappucino. This one is not really that creamy but the flavours works in harmony. Cookie bites, hazelnut flavours and chocolate base...its just YUM YUM! You can try it yourself when you go to starbucks next time :).

For a grande sized frappucino: half pump mocha + half pump white mocha + one pump hazelnut + one scoop vanilla bean + one scoop chocolate chip & creme base
